Waste-Free Wednesday: Egg-cellent Eggs Edition

Using up leftover easter eggsOddly enough, did you know that this week is actually National Egg Salad week?  And it’s no wonder.  Now that Easter and Passover are behind us, most of us are looking in the fridge to find an overabundance of hard-boiled eggs.  Should you eat them or toss them?

 

According to the American Egg Board, you should discard any eggs that are cracked or that have been out of the fridge for more than 2 hours.   So if they’ve been out in the yard all day, you may have to go ahead and toss them.  But if they made it straight back in to the fridge after dyeing, they are fair game for dinner.  

 

But now, what can you do with all of those eggs?  Sure, egg salad is yummy, but even it gets a little old day after day. Want some more creative ways to use up all of those leftover hard-boiled eggs?  Try one of these interesting recipes:

 

 

And don’t forget, egg shells make egg-cellent compost, so you don’t have to toss those either.  Now that’s waste-free!
